Parsley is the herb of choice for a garnish, but it’s also used in bouquet garnis, as the main ingredient in parsley sauce, and as an ingredient in soups and fish dishes. Native to the mediterranean, it’s a rich source of vitamin C and iron, and is said to cure bad breath and cleanse the skin.
Petroselinum crispum has flat, deep-green leaves similar to coriander, with a stronger parsley flavour than curled parsley, P. crispum. Due to its stronger flavour, ‘French’ is better used in culinary dishes, rather than as a garnish.
